Berry banana parfait: post-workout protein

This berry banana honey parfait yogurt with almonds and oats contains over 20 grams of protein. It also has probiotics, antioxidants, vitamins and fiber.

Preparation time 5 minutes. Total time 35 minutes. Recipe for 1-2 servings.

1 cup 0% Greek yogurt
1 scoop of whey protein;
A cup of raw oatmeal;
1⁄4 cup chopped almonds;
1⁄4 tsp cinnamon;
1 sl. melted coconut oil;
1⁄4 cup honey;
a pinch of salt;
1⁄4 tsp vanilla extract;

Cooking method:
In a blender or stand mixer, combine the yogurt with the protein powder (mixing produces a light, fluffy yogurt texture). Place in the refrigerator until the parfait is ready.
Preheat the oven to 150 gr./c.
In a bowl, combine oatmeal, cinnamon, vanilla extract, salt, and almonds.
Melt the coconut oil and honey in the microwave for 30 seconds to a minute, or until the oil is melted.
Add honey and butter to the oatmeal mixture and stir until smooth.
Spread the oat mixture evenly over a parchment-lined baking sheet and bake for 10 minutes, stirring frequently. Don’t overcook.
Remove oats and let cool. The parfait will remain soft after baking, but will become crispy after cooling.
When ready to create the parfait: Place a layer of the yoghurt mixture in a tall glass. Top with a layer of removed oats, then a layer of berries. Repeat layers.
