Chana masala and watercress: Warming winter salad

With this dish you will feel warm and cozy on cold winter days. Beans are high in fiber and iron, making them a great substitute for traditional, high-fat proteins. Beans are also high in magnesium and folic acid, which help lower cholesterol levels and promote heart health. Chana masala and watercress is an easy recipe for a warming winter salad.

(for 4 persons)

2 cloves of grated garlic;
½ onion, diced;
1 ½ cups boiled beans (or canned) plus ½ cup water
Juice from 1 lemon (about 2 tablespoons)
½ teaspoon curry powder;
½ teaspoon ground coriander;
½ teaspoon ground cumin;
½ teaspoon garam masala;
1 large bunch freshly chopped watercress

Cooking method
Heat oil in a large skillet over medium heat.
Add the onion and garlic and cook until soft, 3 to 5 minutes.
Add beans with water (or from a jar, including all the liquid).
Add lemon juice and spices. Cover and simmer, stirring occasionally and adding more water if needed. Cook until the beans are browned and soft, 10 to 15 minutes.
Reduce heat, add watercress and cover.
Cook for 2 to 4 minutes until the watercress is simmered.
Serve immediately and enjoy a delicious, healthy and warming winter salad.
